Ingredients
  

  • 1 egg
  • 1 banana ripened
  • ½ c peanut butter
  • 1 tsp vanilla extract
  • 2 tbsp Splenda brown sugar blend
  • 2 c old-fashioned rolled oats
  • 1 tsp baking soda
  • ½ tsp salt
  • ¼ c ground flax seed
  • chocolate chips (optional)
  • raisins (optional)

Instructions
 

  • Preheat oven to 350℉ (175℃) and line a baking sheet with parchment paper.
  • Whisk together peanut butter, banana, egg, vanilla, and brown sugar in a bowl.

  • In a second bowl, mix oats, baking soda, salt, and flaxseed.

  • Add any desired additional toppings to the second mixture.

  • Combine the two mixtures, mixing them together well.
  • Use a spoon to scoop the mixture into bite-sized balls onto a baking sheet. Bake for 10-12 minutes.
  • Let cool before serving.

Notes

  • Add an additional banana if the mixture is too dry.
  • For larger-sized bites, cook for a few additional minutes.
